HOW TO MAKE BREAKFAST TEA RITUAL - 2ND FLUSH ASSAM

Before the 18th century, it was normal to drink beer with breakfast! In 1838, as Assam began to land in London, although the "saffron" of its age in terms of cost, people began to realise there was an alternative start to the day...

It's strength and famous malty flavour soon made it a firm breakfast favourite. And it still is today.

Perfect suitors: a slow start to the weekend, the Sunday papers, a full English breakfast .... worthy of a full pot, not just a cup.

And here's a secret - it's fabulous with bangers and mash!

Ingredients

Black tea, just like green tea, comes from the Camellia Sinensis plant.

  • - After plucking, the leaves are laid on drying trays & withered to remove some moisture and make more pliable
  • - The leaves are then rolled and laid out and a heady mixture of warm air, aromatic juices, bacteria & enzymes leads to oxidation (a natural reaction that affects strength & colour)
  • - Oxidation is stopped by firing (with hot air) when the leaves are the right (brown) colour depending on the region
  • - The leaves turn black as they dry
  • ... and finally, are sorted or graded by size
