HOW TO MAKE CHINESE TEA RITUAL - HIGH MOUNTAIN OOLONG
In China, Oolong is brewed in eathenware pots and drunk from little porcelain bowls.
While guests are sipping their tea, the "tea master" adds more water to the leaves in the pot so no one runs out!
Today, Taiwanese Oolong is considered by many to be the best. Drink with friends and use a clear teapot to see the delicate colour gradually diffuse through the water

Ingredients
Oolong tea represents less than 2% of tea consumed, so little is known about it.
- - Just like black and green tea, Oolong comes from the Camellia Sinensis plant
- - Like black tea, Taiwanese Oolong tea is withered, bruised and then fermented - but fermention is stopped by firing about 30% of the way [Chinese Oolong has a longer fermentation period]
- - The leaves are left whole and sorted by quality
