HOW TO MAKE TWININGS IRAQI TEA DELI - CEYLON ORANGE PEKOE LOOSE TEA

Iraqis rightly take tea very seriously. They brew black tea leaves from Ceylon or China in boiling water until the leaves rise in the pan and threaten to bubble over.

They then add a few cardamon pods or cloves to give the tea a kick and leave the mixture for five to ten minutes.

When the tea has a strong, dark colour, they drink from small, thin glasses called istikans, with big spoonsful of sugar - and it's drunk very hot!

May we suggest you try spicing yours up occasionally and perhaps a touch of sugar and serve with some middle eastern pastries for a touch of Arabia?

Ingredients

Black tea, just like green tea, comes from the Camellia Sinensis plant.

  • - After plucking, the leaves are laid on drying trays & withered to remove some moisture and make more pliable
  • - The leaves are then rolled and may be cut
  • - "Broken" leaves are laid out & a heady mixture of warm air, aromatic juices, bacteria & enzymes leads to oxidation (a natural reaction that affects strength & colour)
  • - Oxidation is stopped by firing (with hot air) when the leaves are the right (brown) colour depending on the region
  • - The leaves turn black as they dry
  • ... and finally, are sorted or graded by size
