Go all out this Valentine’s Day with our delicious Earl Grey Chocolate & Strawberry Cheesecake. This is the ultimate recipe for that special someone in your life.

This gorgeous cheesecake is topped with fresh strawberries and white chocolate. The perfect way to end a romantic meal and to make sure you’re in the good books all year round. 

The ingredients below will make one small cheesecake or two glasses. If you want one small cheesecake and two glasses double the mixture. 

Strawberry Puree Ingredients 

Qty Ingredients
75g Strawberries
1 Earl Grey Tea Bag
1 tbsp Lemon Juice
25g Sugar
1/2 tsp Powdered Gelatine
  • Soak the gelatine in a tbsp of cold water. Set aside.
  • Cook the sugar, strawberries and lemon juice for 3 mins over a low heat. 
  • Add the contents of 2 earl grey tea bags and cook together for another 3 minutes (minimum heat 80°C).
  • Remove from the heat and allow to cool slightly before blending.
  • Once blended, add the gelatine and stir to dissolve. Set aside.

Crust Ingredients

Qty Ingredients
25g Butter
50g Chocolate Sandwich Cookies
15g Digestive Biscuits
1tbsp Cocoa Powder
1/2 tsp Powdered Gelatine
  • Blitz all the ingredients together till it start to clump.
  • Press into a 4 inch cake tin with a cupcake wrapper placed into the bottom. Chill in the fridge.

Cheesecake ingredients

Qty Ingredients
65g White Chocolate, Melted and Cooled
100g Cream Cheese
1tbsp Icing Sugar
75g Double Cream
  • Beat the cheesecake a little to soften. Whisk in the cream and icing sugar till it thickens and forms soft peaks.
  • Beat in the cooled white chocolate quickly, then fold through the strawberry puree mix reserving a 1tbsp for the top.
  • Spoon half of the mixture into the tin and top with the diced strawberries. Spoon the remaining mix on top an spread out evenly. Top with the reserved strawberry sauce.
  • Chill for about 2 hours before garnishing with chocolate curls and a fresh strawberry.
