This is the ultimate tart to impress all your friends and family, great for dinner parties or a spot of afternoon tea.

INGREDIENTS

Qty  Ingredients 
2/3 Medium peaches
100g Sugar
300ml Water
2 Tea Bags Camomile Tea
200g Mascarpone
1/2 Lemon Juice
100ml Double cream
3 Tbsp. Icing sugar
125g Flour
2 Tbsp. Caster sugar
Pinch Salt
50g Butter
1 Egg

METHOD

Chef Tips: Any of the remaining juice from the peaches can be mixed with sparkling water for a refreshing yummy drink

The Filling

  1. Remove the stones from the peaches and quarter.
  2. Combine the sugar and water and add the Camomile tea bags to a medium saucepan and bring to the boil for 4 minutes. Remove tea bags.
  3. Add the peaches and remove from the heat.
  4. Allow to sit in the juices for about 20mins then strain the peaches through a fine sieve.
  5. Remove the skin from the peaches and slice each quarter in half.

The Tart

  1. Rub butter, sugar, flour and salt together until it resembles bread crumbs.
  2. Add the egg and bring the mixture together
  3. Chill for 20mins
  4. Roll out the pastry and line an 8 inch tart tin. Prick the base and chill for a further 10 mins.
  5. Place a sheet of greaseproof paper on top of the tart and weigh it down with baking beans or dried beans.
  6. Bake for 15mins the remove the beans and bake for a further 5mins.

Method Camomile Tea and Peach Mascarpone Tart

  1. Whisk all the ingredients together.
  2. Fill the cooled tart case with the mixture.
  3. Arrange the peaches around the tart and brush with some of the syrup.
  4. Finish the edge of the tart with some flaked almonds.
  5. Serve!
