Shakshuka is synonymous with breakfast. Try this savoury dish of eggs poached in a sauce of tomatoes, peppers and onions. Brunch anyone?


Qty Ingredients
150ml Hot Water
2 Golden Tipped English Breakfast Tea Bags
400g Chopped Tomatoes (Approx 1 Tin)
½ Red Onion, Chopped
2 Cloves Garlic, Chopped
2 Sweet Peppers, Chopped
½ tsp Chilli Flakes
½ tsp Pepper
½ tsp Sugar
1 tsp Salt
1 tsp Paprika
1 tsp Vinegar
3-4 Eggs
50g Feta
150g Spinach, Chopped
Oil for Frying

  • Brew the tea in the boiling water for 5 minutes.
  • In the meantime, sauté the onions and peppers in oil until soft.
  • Add the tea, tinned tomatoes, garlic, the seasonings and vinegar.

  • Cook for 5-10 minutes over a low heat until the liquid has reduced.
  • Add the eggs, then cover with a plate or foil and cook for another few minutes, until the egg whites have cooked.
  • Sprinkle over the feta and spinach and serve.
