This summer enjoy our glorious Camomile and Maple Chicken Lettuce Wraps, these are a great addition to any summer party or event. They are even a great midday snack, one to really impress your friends and family with. Also one of the great things about these little beauties is that they are so easy to make. 

Ingredients 

Camomile and Maple Chicken
Qty Ingredients
2 Camomile Teabags
250g Chicken Breast
100ml  Maple Syrup
2 Tbsp. Tomato Puree
1 Tbsp. Vinegar
1 Tbsp. Garlic Powder 
1 Tbsp. Salt
1/2 Tbsp. Cayenne Pepper
200ml Water
The Salad
Qty Ingredients
1 Red, Green and Yellow Pepper Diced
1/2  Pineapple Diced
1/2  Red Onion, Finely Diced
2 Little Gem Lettuce, Leaves Removed

Method

Chef Tips: Feel free to substitute the niblets for chicken or turkey breast for an easier and healthier option

  1. In a saucepan bring to the water to the boil and add the Camomile Teabags. Boil for 2 minutes then add the maple syrup, tomato puree, vinegar and all the seasonings.
  2. Stir together and reduce the heat to medium. Continue to stir until the mixture thickens.
  3. Once the sauce has thickened, coat the chicken and spread the nibblets on a baking tray.
  4. Bake for 30 minutes at 200C. Once baked allow to cool.
  5. Shred the chicken and toss with the pineapple, red onion and pepper.

Spoon the chicken salad mixture into the centre of the lettuce and serve.
