Happy, healthy, and 100% scrumptious Hot Cross Muffins created by Nourishing Amelia

Ingredients - MUFFINS (makes 6 large muffins)

Qty Ingredients
200g Buckwheat Flour
80g Oats (Ground Into Flour)
2 Ripe Bananas
2 Tbsp. Chia Seeds Mixed With 6 Tbsp. Water
8 Tbsp. Maple Syrup
90g Raisins
200ml Almond Milk
1 tsp Vanilla Extract
1 tsp Cinnamon
½ tsp Ground Nutmeg
2 tsp Mixed Spice
1 tsp Lemon Juice
1 tsp Baking Powder
Pinch of Salt

Tbsp. Buckwheat Flour
Tbsp. Maple Syrup
Tbsp. Water

How to

  1. Pre-heat the oven to 150 degrees celsius.
  2. Combine the chia seeds with the water in a mug or small bowl, then leave to form a gel-like consistency.
  3. Add the bananas, the maple syrup and the lemon juice to a food processor and blend until smooth.
  4. Combine the buckwheat flour, oat flour, all the spices and the baking powder in a bowl then add the banana mixture from the food processor.
  5. Add the now-thickened chia seed mixture along with the vanilla extract.
  6. Slowly pour in the almond milk, stirring as you do so. Then add in the raisins and pinch of salt.
  7. Place cupcake or muffin cases in a tray then fill the cases about 3/4 the way with the muffin mixture - they’ll rise in the oven.
  8. Place the muffins into the oven for 20 minutes.
  9. Whilst the muffins are baking, simply stir together the cross ingredients in a small bowl to make a thick paste - add a little more water if needed.
  10. After 20 minutes remove the muffins from the oven. To make the crosses just roll the mixture into strips and arrange them on top of the muffins.
  11. Place the muffins back into the oven for a further 8-10 minutes.
  12. Remove and leave to cool for at least 15 minutes before tucking in with a mug of English Strong Breakfast Tea.
